You can purchase dried Thai chilli from Asian grocery store. Please note: this is the hot variety.
Step 1: Put the amount of dried chilli that you required into a dry pan.
Step 2: Turn stove on to "low" heat setting, as you don't want to burn the chilli. The low setting allow the dried chilli to be roasted evenly.
Step 3: Use chopsticks or a wooden spoon to stir the chilli frequently to get an even roasting.
Step 4: After about 5 to 10 minutes, the colour should look like this. Turn off heat and continue stirring the chilli for about 1-2 minutes. Set aside to cool.
Step 5: Once the roasted chilli are cooled, put in a blender. Depending on how fine you want your chilli to be, I prefer mine to be fine (but not too powdery) so I set it to high.
Step 6: After about 30-45 seconds of blending, I got the texture like this.
Step 7: Store the grounded chilli in an airtight container.
